"From ordinary to extraordinary: Unlocking the creative potential of local cuisine for sustainable food practices"

The theme "From ordinary to extraordinary: Unlocking the creative potential of local cuisine for sustainable food practices" highlights the significance of adopting sustainable food practices to support local communities, promote environmental health, and create a healthier planet. These practices include using locally sourced and seasonal ingredients, reducing food waste, and adopting eco-friendly practices. By promoting these practices, the culinary industry can contribute to a healthier planet while also supporting local communities and promoting environmental health. Phuket as the host for the upcoming annual conference in 2024 for the UNESCO Creative City of Gastronomy Network will provide a perfect platform to showcase how local cuisine can contribute to sustainable food practices. All members will not only get to savour Phuket's culinary treasures that promote good health and wellness according to the city's slogan "Good Food, Good Health, Good Spirit…in Phuket," but also create a change by establishing multicollaboration to promote sustainable consumption and elevate local creativity to add value to local cuisine and products. The proposed also reflect Thailand's "BioCircular-Green Economy Model" (BCG) policies aim to promote sustainable food practices in the food and agriculture sectors. These policies enable technologies such as customer behaviour analytics, optimized waste production, traceability, food, and product safety, as well as the development of high-value and novel food products such as food for special groups of people and functional ingredients. These policies are vital for the country's social, economic, and environmental aspects. Arrut runs an eco-wellness property called Suan Sampran in Nakornpathom and for the past 15 years, he has been empowering local farmers to convert to organic agriculture. He founded the Thai Organic Consumer Association (TOCA) 4 years ago to encourage businesses and consumers to connect to organic farmers through the TOCA Platform. This area-based partnership also works on solutions for food waste. The Tourism Authority of Thailand (TAT) and the Thai Convention and Exhibition Bureau (TCEB) support TOCA on its mission via Organic Tourism and Farm to Functions initiatives.

Chef Duangporn Songivsava (Bo), has always been passionate about good food and strives to create exceptional Thai food. This desire to excel has only amplified in the years since opening Bo.lan. Bo completed her Masters in Gastronomy in Adelaide, before returning to Bangkok to pursue a career in the kitchen. Joining the teams of Cy’an Bangkok and latter Nahm in London. It was there the two chefs met and Both felt the time was ripe to open a truly remarkable Thai restaurant in her mother country. Bo.lan opened its doors in early 2009 and Since, Bo has constantly been campaigning to raise awareness of important issues regarding Thai culinary wisdom and food security. Whether it be through teaching at several leading Thai universities or on her weekly television show Eat Am Are (Thai PBS). In 2013 Bo was presented with the inaugural award for Asia’s Best Female Chef, as part of Asia’s 50 Best Restaurants.
